Christmas Cooking with Ashley- Sisters Strawberry Shortcake


While in Wichita, we decided to host a Tea Party. And you can't have a successful tea party if you don't have a great dessert. We found a great recipe from Southern Living for white cake and peppermint frosting. But a teenage girl and a "schooler" girl would most likely not enjoy anything peppermint. So we altered it to make it into a strawberry shortcake. 

Ashley helped with most of it. 

Sophie helped with cutting the strawberries and placing them on the layers. Ainsley helped by watching. 

Sisters' Strawberry Shortcake (hacking and altering a Southern Living recipe)

Cake Ingredients:
1 c butter- softened
2 c sugar
1 Tbsp vanilla extract
3 1/2 c flour
1 Tbsp baking powder
1/4 tsp salt
1 c milk
8 lg. egg whites

Directions:
1. Preheat oven to 325 degrees and grease 3 circular cake pans (or in our case 3 square cake pans)
2. Beat butter until creamy. Gradually add sugar, beating until light and fluffy
3. Add vanilla until blended
4. Combine flour in other bowl with baking powder and salt
5. Add flour to butter mixture alternatively with milk. Beat until blended set aside.
6. Beat egg whites at high speed until stiff peaks form.
7. Stir egg whites into batter in 3 batches and spoon into cake pans.
8. Bake at 325 for 30 minutes or until golden brown. Cool in pans on wire racks 10 minutes; remove pans to wire racks and cool completely - about 1 hour.


Frosting Ingredients:
1 c. butter- softened
8 oz cream cheese- softened
1/4 tsp salt
1 Tbsp vanilla extract
32 oz bag powdered sugar
2-3 Tbsp. milk

Directions:
1. Beat butter, cream cheese, and salt at medium speed till creamy. 
2. Beat in vanilla.
3. Gradually add powdered sugar and milk. Beat at low speed until blended.

Place strawberries and frosting between the cake layers.
